MATS and MAPS technologies were developed by Juming Tang, Ph.D., a leading food engineering scientist at Washington State University, in conjunction with a consortium of private food packaging and equipment companies and the U.S. Department of Defense. By ensuring uniform and reproducible heat treatment within the MATS system, Dr. Tang was able to overcome a technical challenge that has long prevented the food industry from exploiting the rapid heating capabilities of microwave energy. The MATS technology is the first in-package microwave sterilization technique accepted by the U.S. Food and Drug Administration.
